Walrus Ale + Lager Signature Beers

Over the years, Walrus + Carpenter has met and become friends with many great folks in the brewing world. After many late-night talks and a lot of beer, we’ve begun to collaborate with these amazing minds of the industry to create some gratifying and exceptional brews.

We plan to roll out new beers every few months, as our circle of collaborators and friends grows. Stop in, stay tuned, and

The journey from enjoying and serving some of America’s best beers to creating our own has been an organic process. Over the years, we have had the pleasure of meeting and befriending hundreds of beer lovers. After so much discussion, sampling, and hands-on education, we finally thought it was time to take a step into brewing.

As Collaborative Gypsy Brewers, Walrus Ale + Lager is continually seeking out new collaborations with our friends. We are always working on new recipes for beers that are not only to be appreciated in their own right, but also that pair well with the wonderful dishes at Walrus + Carpenter.

Mosaic Citra Ale (4.7% ABV)


MCA is an Ale that is Lagered with Kölsch yeast and generously hopped with Mosaic, Citra, and Amarillo. This beer blends the lines between German and American styles, as well as IPA and Kölsch. MCA is your answer to what to drink when you don’t know what to drink. It is our first beloved house beer and has quickly become one of the favorites on tap.

Best paired with: Walrus Burger, Southern Fried Chicken, Maple Bourbon Ribs, and Cheddar-Onion Sausage

belgian-style witbier (5.1% ABV)

Shake Wheat

Perfect example of a classic Belgian Witbier, Shake Wheat is refreshingly light and crisp, and screams to be paired seafood or meals with citrus accents. Shake Wheat showcases tones of orange citrus, cummin, corriander, and grains of paradise.

Best paired with: Wellfleet Oysters, Shrimp + Grits, Seared Steelhead Trout


hop-forward pilsner (5.0% ABV)


Walrus Ale + Lager and Nod Hill Brewery have teamed up to bring you the new Giddyup collaborative beer, with an artistic nod to the local band Hitch & The Giddyup, who has been a staple under the Neon Swine at Walrus for the past 5 years.

Giddyup is a hop-forward Italian Pilsner brewed with German Pils malt & assertively dry-hopped with a blend of noble hops. It has a dry breadiness and is a wonderful Bulgarian beer.

You can find Giddyup on tap at Walrus + Carpenter, at Nod Hill Brewery, and sold in cans at many of your favorite beer pick-up hot spots.

Best paired with: Pulled Pork Shoulder, McWalrus Burger, Animal Poutine, and Smoked Chicken Wings
